I love springtime! Spring cleaning, adding life back into your home, and delicious fruits and vegetables that finally come back in season. It really is one of my favorite times of year! And while I love cozy soups, chilis, and stews during the winter months, switching over to fresh spring salads around this time of the year is one thing that I really look forward to!
Believe it or not, I actually used to hate salads. Growing up on junk food and drive-throughs, the thought of uncooked vegetables thrown together on a plate didn’t sound very appealing. But fast forward through my wholesome eating journey, I now LOVE salads! As long as it’s the RIGHT salad. I can’t do just any old boring salad these days. It needs to be loaded with flavor, crisp, crunchy textures, and with a homemade dressing that knocks it out of the park.
