Healthy Recipe For Chicken Tacos


These healthy chicken tacos come together in about 30 minutes, making them perfect for busy weeknights. They’re packed with flavor and totally customizable!

I LOVE tacos… fish tacos, cauliflower tacos, tempeh tacos… if it has the word taco in the name I’m here for it! That said, I figured it was about time to share my go-to healthy chicken taco recipe.

These tacos are so flavorful and delicious and the entire recipe comes together in 30 minutes from start to finish, which is ideal when you’re wanting to make a healthy dinner during those busy weeknights!

Rotisserie Chicken Tacos


Whisk together olive oil, lime juice, garlic, chili powder, salt and cumin in a small bowl. Pour mixture over chicken thighs and let marinate for 15-30 minutes.You can definitely marinate the chicken longer (even overnight) if you want, but it’s not necessary!

Grill chicken thighs using an indoor or outdoor grill or cook the chicken on the stovetop in a cast iron skillet over medium-high heat for 10-12 minutes, flipping halfway, until cooked throughout (internal temperature should be 170-175°F). Once cooked, pull chicken from heat and let rest for 3-5 minutes.

These chicken tacos are a meal on their own, but it’s always fun to have a few sides and a festive drink… especially if you’re hosting dinner. Here are some options:

Ground Chicken Tacos {30 Minute Recipe!}

Store any leftover chicken in an air-tight container in the fridge for 4-5 days. Store any leftover toppings in separate containers in the fridge for up to 5 days. For reheating, I recommend warming the chicken over the stovetop to crisp it up a little.

Healthy Sriracha Shredded Chicken Tacos


All good tacos begin with a batch of freshly cooked chicken. These tacos are made with my favorite grilled taco chicken. I like to use boneless skinless chicken thighs rather than breasts because they are always tender and won’t dry out. Chicken breasts will also work for the tacos but be sure not to over-cook them or they will dry out.

The secret to making tacos is simplicity. Traditional street tacos are served on corn tortillas and topped with just chopped onion, tomato, cilantro, salsa and a squeeze of fresh lime. No cheese, avocado, sour cream or any of that other stuff. But who are we kidding? I honestly NEED my favorite sour-cream cilantro sauce on my tacos. The creaminess of the sauce compliments the spicy chicken and zesty pico perfectly. You can top the tacos off with your favorite salsa, sour-cream or my quick creamy cilantro sauce (recipe in notes).

You can have these yummy tacos with just the pico and sour-cream or cilantro sauce, or you can load them up American style and add chopped romaine lettuce, avocado or guacamole, or cheese. Don’t forget a squeeze of fresh lime and enjoy these tasty grilled chicken tacos any way you like!

Grilled Chicken Tacos

To make cilantro sauce: combine 1/4 cup mayo or sour cream, 1/4 cup greek yogurt, 1 tablespoon lime juice, 2 tablespoons minced cilantro, and a pinch of salt and pepper. Stir to combine.

If there's one recipe on the blog that I've made the most, it's these healthy chicken tacos.  I make them at least once a week, sometimes twice.  They are a weeknight wonder - ready in just 25 minutes and completely stress free.

Quick + Healthy Chicken Tacos

When I first posted this recipe back in January 2018 I would make them on the stovetop.  These days I make them in the oven.  Both ways work just fine, but I find oven baking the easier of the two given it makes it a one-pan dish and is less hands-on.

My favourite way to assemble the tacos is to spread some mashed avo and greek yoghurt on the tortilla, then cover with salsa, a little cheese, the chicken mixture and lettuce.  SO GOOD.

I’ve made servings for 4 here but you could easily double or triple the recipe to feed a larger crowd.  Throw all the fix-ins on the table and let everyone build their own.  Perfect particularly if you have some fussy eaters to please.

Healthy Taco Recipes: Buffalo Chicken, Chicken 'n Waffle

The soft in soft taco is referring to serving the tacos in a soft shell.  You can have either soft flour or corn tortillas, and both work well in this recipe.  They are very similar to wraps.

We use skinless and boneless chicken breasts to make these healthy chicken tacos.  The chicken is cut up into small chunks, and a little goes a long way when filling soft tortillas.

I recommend getting 700grams / 1 ½ lbs of chicken breast for 4 people.  This will yield approximately 8 tacos.  Feel free to scale the recipe up or down to feed more or less people.
